A dry and spicy profile! The nose is powerful, tangy, and warm, with notes of cereals, cocoa, and mushrooms. On the palate, the attack is fresh, followed by a velvety texture and great intensity. Rice, spices, and hazelnut notes emerge. The finish is clean. An approachable sake that will be enjoyed whether chilled, at room temperature, or warmed.

What We Love

Founded in 1688, The Mitsutake Brewery have a long history, and its influence in the region’s sake production is undeniable. “Innovation in Tradition”, it is by following this philosophy that the producer strives to create new products, constantly improving quality while also respecting methods inherited from the past.
For the young Toji (master brewer), the ultimate goal is to produce sake that brings true happiness to those who taste it.

Their Expertise

Special attention is paid to the water, drawn directly from a well located within the brewery. Depending on its quality, its use varies: for fermentation, rinsing, cooking, etc. The rice, meanwhile, comes from a local producer under an exclusive contract.
For the past forty years, The Mitsutake Brewery has received several medals and distinctions at numerous national and international competitions, including a gold medal at the renowned International Wine Challenge.
