Junmai Bodaimoto Tôtôto Sake is characterized by its intensity and velvety umami.
The first nose is intense, with fruity notes of apple and mandarin zest. On the second nose, the aromas open up with more intensity, revealing pineapple notes and a sweet character.
On the palate, it is fresh and powerful from the first sip, with a gentle roundness and gradually emerging umami. Flavors of fruits such as green melon, green kiwi, and mirabelle plum come through. The mid-palate is velvety and umami-rich. The finish is spicier and peppery, with earthy mushroom notes, subtle hints of light soy sauce, and a touch of iodine. The texture is long-lasting. When enjoyed warm, the palate becomes more tangy, with a salivating texture and refreshing brightness.
