Saké Junmai Calm is distinguished by its texture and umami.
The initial nose is subtle, revealing notes of fruit and cereal. The second nose is distinctly pear, with a milky, yogurt-like undertone.
The palate offers a mellow attack with pleasant acidity, feeling fresh and clear. While not intensely aromatic, it boasts significant texture. Umami is very prominent, alongside spices like pepper. The finish is subtle, featuring cooked pear with a persistent hint of pepper.
