Kiyama Brewery

Located at the eastern end of Saga Prefecture, on Kyushu Island, Kiyama Brewery was founded at the beginning of the Meiji era by an association of landowners who decided to try brewing sake.

Using mainly water from Mount Sefuri and local rice, the sake brewed by Kiyama Brewery is the most widely consumed in the region.

Junmai Kihin Sake is an indulgent and seductive sake!

The nose is aromatic, with fresh green notes of apple, lychee, and passion fruit. Bright, tangy fruit aromas come through on the nose, giving an overall charming impression. On the second nose, the aromas open up with slightly more intensity, revealing lychee and passion fruit, along with a touch of ripe star fruit and delicate raspberry.
On the palate, it is fresh with a gentle roundness on the attack. The texture is beautifully fluid, with flavors of exotic fruits, plum, raspberry, and apricot. The finish is velvety yet precise, with a subtle sweetness. It is long, ending with a hint of almond on the very finish.

Tasting temperature: chilled (12°C), room temperature (18°C)

  • Pairings

Pineapple and langoustine carpaccio with lime zest mayonnaise, crab and seafood platter, lemon chicken, and almond tofu with mango coulis.
