Komatsu Brewery

Komatsu Brewery is a small brewery located in the mountains of northern Saga Prefecture. Founded around 1850, it has 5 members, including the current director Daisuke Komatsu, 7th in line, who also serves as Toji (master brewer).

The brewery also produces rice shochu, plum liqueur, amazake, and mirin for drinking.

  • Characteristics

The Junmai Manrei Dry Sake presents a discreet initial nose with an almost mentholated freshness. It offers notes of dried fruit and rice. Upon opening, subtle hints of glutinous rice and apple emerge.

The palate is fresh, direct, and features a certain, almost saline, minerality. It reveals notes of fruits such as apple, melon, and cooked rice. The mid-palate is straightforward, tangy, with a very dry finish. The sake is fluid on the palate with a hint of umami. The finish is mouth-watering, saline, and leaves the palate clean for gastronomic pairings.

Alcohol Content: 15%

Serving Temperature: chilled (12°C), room temperature (18°C)

Dried fruit, rice, mint, apple, apple, melon.

  • Pairings

Karaage fried chicken, beef/pork somen noodles and vegetables sautéed with sake and miso, duck confit and fries, pan-fried porcini mushrooms with garlic, herbs, and coarse salt.

  • Serving

In a wine glass, chilled or at room temperature.

Unopened: several years in a cellar
